Grilled Salmon with Avocado Salsa
Outdoor grilling doesn’t have to be all burgers, hotdogs, and thick white-bread buns. Take a lighter approach to your barbecued meal with a healthy serving of Grilled Salmon With Avocado Salsa. It’s a quick, easy dinner — so easy, you can serve it on a weeknight, and have relatively little mess to clean up!
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 4 salmon fillets
In a large bowl, mix oil, salt, pepper, and paprika. Coat the salmon fillets and refrigerate for 30 minutes.
- Grill the salmon on high heat for 2 minutes each side.
- In a separate bowl, lightly toss the avocados, red onion, lime juice, olive oil, and salt to taste.
- Spoon avocado salsa on top of the cooked salmon.
- Top with finely cut cilantro and enjoy!
